Reading Journal – 7

With increasing school work, I have been stressed and meaning to cook Indian food because it reminds me of home and gives me comfort. So, this weekend, my friend and I made Kadhai Paneer with rice which was really fun and relaxing and it also gave me a chance to spend some time with them as well. Every step of this process was fun; from going to the Indian grocery store together to buy ingredients for the meal to playing music and dancing in the kitchen while cooking, I realized I had not felt that stress-free in a very long time. I am always so busy with homework I forget to take some time to do self-care activities but cooking this weekend made me feel a lot better and has made me realize the importance of prioritizing my health. So, I have decided that I will try to cook at least one major Indian meal every week either with a friend or just by myself and actually schedule it so that I make it a priority. I forgot to take a picture while cooking but here’s a picture of what Kadhai Paneer looks like (ours didn’t look this fancy but it was definitely really yummy!).
